Gluten-free flour mixture variation 1

Ingredients:
2 ½ c rice flour
1 c potato starch flour
1 c tapioca flour
¼ c cornstarch
¼ c bean flour
2 Tbsp xanthan gum
Procedure:

1.Sift ingredients together. Store in an airtight container. If you are not going to use it within a week (especially if you use brown rice flour instead of white), freeze the mixture. Let stand at room temp for 15 minutes before using.


Yield: 5 cups

**Can be used cup-for-cup for wheat flour. I've had good luck with this one not being too grainy.
